Vincent Paris Vintage 2021 Bottle Sizes 750ml Country France Region Rhône Appellation Saint-Joseph Wine Type Red - Still Varietals Syrah Farming Organic Vineyard Cuvée Les Côtes is comprised of four east facing parcels located at an elevation of 300 meters in the central part of Saint-Joseph north of Cornas in the village of Ardoix. Two of the four parcels are in the Les Côtes vineyard. Vines range from 20-25 years of age. Soil Granite Viticulture Paris farms organically incorporating many biodynamic principles. All vineyard work and harvesting is done manually. Vinification All fruit is destemmed. Primary fermentation lasts 20 days. He made it clear to us that only Granit 60 and La Geynale have stem inclusion. Paris uses a combination of stainless steel vat (approximately 2/3) and old french oak barrel (1/3). Only native yeast is used in the fermentation process and no new wood is ever incorporated. No fining or filtration. Aging Aged for 11-12 months in neutral French oak.
