Vines average 25 years in age. Soil Granite Viticulture All vineyard work is done by hand following organic principles. Vines planted at a density of 8,000 vines/ ha. Vinification Each parcel is vinified separately. Native yeast fermentation in inox (stainless steel) tank at 15 to 20 degrees celsius before malolactic fermentation occurs in barrique.
