Vineyard From a 0.27 hectare south facing parcel of vines planted in 2010 in the village of Montgenost in the Côte de Sezanne. The vines were planted by Etienne and the plot is owned by his mother. In 2018, Etienne purchased the parcel. He named the parcel "Le Fours" which translates to "the oven".
Soil Sandy clay over chalk bedrock.
Viticulture Vineyards are worked organically and plowed by tractor and horse. Vines are planted at a density of 8,000 plants per hectare. Chablis pruning is employed.
Vinification Direct press of the entire harvest with separation of the juice. Native yeast fermentation in tank before wine is moved to be aged on the lees in a 600 liter oak demi-muid before bottling. Malolactic fermentation completes naturally.
Aging Aged for 30 months sur-lattes under cork closure. Disgorged by hand.
Production 832 bottles produced.
Notes Les Revenants means "the one that is coming back".
