Vineyard Aurélien owns and works 3.5 hectares total in Saint-Joseph. The older vines averaging 40 or more years make up the cuvée La Sybarite.
Soil Granite
Viticulture All vineyard work is done by hand following organic principles. Vines planted at a density of 8,000 vines/ ha.
Vinification Each parcel is vinified separately. The grape clusters are sorted and destemmed before being gently crushed and undergoing native yeast fermentation in tank. Daily remontage (pump over) occurs as needed and warm maceration is employed.
Aging Aged for 12-15 months in barriques (approximately 20% new).
Production 2,400 bottles.
Notes In French, "une sybarite" is a self-indulgent person who is always seeking luxury. This cuvée is a selection of the best barrels in the given vintage.
