Soil Calcareous Clay, Siliceous clay Viticulture Natural Yeasts and Biodynamic Practices. Vinification Exclusively made from bleeding the tanks containing red wine, the fermentation occurs between 18 and 20°C. Racking is done at the end of the fermentation process.
