Vineyard This is the first parcel planted by Gérard Ruppert by massale selection expanding on the fruit he purchased in Fosse-Grely. Fosse-Grely is a 2.13 hectare south, south-east facing lieu-dit located at the southeastern limit of the Côte des Bars right outside the small village of Essoyes.
Soil Topsoil is thick and predominately red clay and calcareous rock. Argilo calcareous (clay-Limestone) subsoil.
Viticulture "Respect the vines." All farming follows the lunar cycles and principles of biodynamics. All vineyard work is done by hand. Bénédicte and Emmanuel farm their garden, grass (hay) and animal fertilizers to use as cover crops in their parcels. Pruning does not begin until March and vines are braided to transfer energy and to naturally protect the vines against frost during the winter.
Vinification Grapes are lightly pressed and all fermentation occurs in barrel for 9 months, fûts and demi-muids (all used Burgundy barriques). Only natural yeast is used. Primary fermentation is not rushed. Malolactic fermentation occurs naturally. The champagne is bottled without dosage and without sulfur.
Aging Aged for 20 months in bottle 'sur lattes'. Bottled brut nature sans soufre.
Production Extremely limited.
