Ruppert-Leroy Vintage MV Bottle Sizes 750ml Country France Region Champagne Appellation Champagne (Aube) Wine Type Sparkling Varietals Chardonnay, Pinot Noir Farming Biodynamic Vineyard Assemblage of Chardonnay and Pinot Noir from each of their parcels - The Ruppert-Leroy farm lies at the southeastern limit of the appellation, outside the small village of Essoyes, just five kilometers from the border of the Côte d’Or. Soil Clay-Limestone with a majority of red clay Viticulture "Respect the vines." All farming follows the lunar cycles and principles of biodynamics. All vineyard work is done by hand. Bénédicte and Emmanuel farm their garden, grass (hay) and animal fertilizers to use as cover crops in their parcels. Pruning does not begin until March and vines are braided to transfer energy and to naturally protect the vines against frost. Vinification A perpetual solera process, whereby the wine of each new vintage is added. Grapes are lightly pressed and all fermentation occurs in barrel (all used Burgundy barriques). Only natural yeast is used. Primary fermentation is not rushed. Malolactic fermentation occurs naturally. Aging Aged for 20 months in bottle 'sur lattes'. Bottled brut nature sans soufre.
