Vineyard Cour-Cheverny as an appellation is only 48ha in size! The domaine uses their oldest vines to create the Porte Dorée cuvée. Vines are between 40 and 90 years old. Vines yield only 10hl/ ha and are planted at a density of 5,800 plants/ ha.
Soil Limestone bedrock under sand and clay.
Viticulture As with each of Tessier's wines, organic methods are used as Philippe works the soils and harvest the grapes by hand.
Vinification All fruit is hand harvested. The grapes undergo a slow and long fermentation in large oak demi-muids. Tessier prefers using large upright barrels for the vinification of Romorantin. Only native yeasts are used at the domaine. Tessier allows malolactic fermentation to complete naturally, does not fine, and only applies a light filtration if necessary at bottling.
Aging At least 10 months in upright demi-muids and barrique.
