Farming Biodynamic
Vineyard Pontons Mêlées - average vine age is 60 years. Planted before 1945 with at least 8 different grape varieties. Poulsard, Trousseau, Savagnin, Chardonnay, and Pinot Noir, as well as, Enfariné, Noa, Beclan, and others.
Soil Blue Marne
Viticulture Vineyards are farmed using biodynamic principles with a focus on naturally improving the microbiological life of the soils.
Vinification The grapes are hand-harvested. Direct pressed and then fermented in steel tank. 12 day maceration, fermentation and malolactic fermentation in steel tank.
Notes Yield 20hl/ha. Vines were ripped up in 2015 making 2014 the last vintage of this cuvée. Valentin has replanted a new vineyard with a variety of traditional Jurassic varieties which he intends to use to make future rosé.
