Soil Clay-Limestone Viticulture Vineyards are farmed biodynamically. Vines are hand harvested with all sorting done at the vine. Vinification 50% whole cluster in semi-carbonic, 50% crushed but not destemmed, natural yeast. SO2 - minimal added at bottling, minimal use during fermentation and elevage depending on vintage.
