Vines planted in 1985. Approximately 2.5 hectares. Soil Clay-limestone with marl underneath Viticulture Vineyards are farmed biodynamically. Vines are hand harvested with all sorting done at the vine. Vinification Juice is pressed in three separate runs. Vatting and fermentation in barrel. Light fining before bottling. Aging 10-12 months in used oak barrels Production less than 5,000 bottles Notes The owl is the symbol of the city of Dijon. The famous “chouette de Dijon” is sculpted into the chapel of Notre-Dame de Dijon. Local legend says that if you rub the owl with your left hand while making a wish it will come true.
