Farming Organic
Vineyard From the plateau du Larzac, the vines lie 400 to 500 meters in altitude. The red grape varieties are planted on the lower part of the vineyard. Vines average over 65 years in age.
Soil Chalky clay soils.
Viticulture The soils are worked naturally without the use of any chemicals. The depth of the soils allows the roots to plunge easily and the rubbly limestone give extra minerality. The association of freshness (due to the altitude) and sufficient water in the relatively hot Languedoc climate is a perfect combination to produce wines that are elegant and precise. Yields average 35 hl/ha.
Vinification Native yeast fermentation in 20hl cement tanks. 21 day maceration. The wines is moved by gravity to 500L barrels.
Aging Aged for 12 months in 500L barrels.
