Vineyard A single parcel in Polisot facing south-east, east and planted by massale selection. Vines are approximately 40 years old and sit at the higher elevated top of the parcel's slope dominated by more clay and less topsoil.
Soil Clay and Kimmeridgian Limestone.
Viticulture Dominique Moreau and her children farm their parcel biodynamically. Vines are planted at a density of 8,000 vines per hectare. The one parcel is broken up into four parts depending on rootstock and vine age. All vineyard work is done by hand. Pruning does not begin until the Spring. Only copper is used in the vineyard.
Vinification Grapes are lightly pressed and fermentation occurs in stainless steel. Only native yeast is used. Malolactic completes naturally.
Aging The wine rest sur lattes for at least two years before disgorgement with no dosage.
