Vineyard A single parcel of Chardonnay within Dominique's 2.5 hectare vineyard in Polisot. Vineyard faces south-east, east and planted by massale selection. Vines are approximately 25 years old.
Soil Clay and Kimmeridgian Limestone.
Viticulture Dominique Moreau and her children farm their parcel biodynamically. Vines are planted at a density of 8,000 vines per hectare. The one parcel is broken up into four parts depending on rootstock and vine age. All vineyard work is done by hand. Pruning does not begin until the Spring. Only copper is used in the vineyard.
Vinification Grapes are lightly pressed and fermentation occurs in a combination of stainless steel tank and used Burgundy barriques. Only natural yeast is used. Malolactic completes naturally.
Aging The wine rest sur lattes for three years and bottled with no dosage.

The 2015 Extra Brut Eloquence (Chardonnay) is another superb wine in this range from Marie Courtin. Bright and focused, the 2015 is loaded with character. Citrus confit and floral notes take on striking richness as this resonant, expansive Champagne shows off its personality. The purity of the flavors is just striking.
