Soil Very poor chalky-clayey soils.
Viticulture Organic farming.
Neither herbicides, pesticides nor any other chemicals were used on any of the vines planted to make our Pell a Pell.
We do not plough the ground and we leave the grasses and plants to protect the soil 100% picked by hand on 19/8/22.
Plastic 20 kgs. cases
Vinification the grape is stranged with the feet with a person inside the tank.
Once the tank is filled, it closes until the fermentation ends, which lasts 12 days.
Spontaneous fermentation with yeasts from la finca.
Malolactic fermentation.
Pressed with a vertical press.
Total maceration: 15 days.
Aging 5 months in inox tanks . No clarification.
Notes All the white wines from Pardas have always been directly pressed.
The Pell a Pell is the exception.
It’s an orange white wine, fermented and macerated with its own skins. Orange wines have never been part of the main wine current in our region, but they are part of our wine-growing tradition.
Long time ago, orange wines were also present in our farmhouses.
The elaboration can’t be any more elemental.
Whole grapes inside the tank. A person inside stepping on the grapes and filling the deposit until it’s full. Covered up during the fermentation without any intervention, and once it’s finished, bleed without pressing it.
Another expression of the Xarel·lo variety.
