Vineyard From a 0.4405 hectare parcel in Lieu-dit Les Vaudayants in Bouzy Grand Cru planted by sélection massale in 1975. Vines are exposed south, south-east.
Soil 70 cm of clay on limestone bedrock.
Viticulture The parcel is farmed organically and Rémy implements bio-dynamic practices. Vines are simple Guyot trained. He along with neighboring friends Antoine Paillard (of our Champagne Pierre Paillard) and Benoît Lahaye make their own organic compost to fertilize their vines.
Vinification Harvest occurred on September 29, 2016. Grapes are picked and a double sorting is employed - one immediately at the vines and one before de-stemming by hand. Grapes are gently pressing. Native yeast fermentation. 17 day maceration in 500L barrels. Three punchdowns before élevage occurs in 2 year, 3 year and 4 year old barrels. The juice was racked once in July 2018 and bottled December 2018 without fining or filtration.
