Vineyard From 1.5 ha of vines from two plots in Anjou; St Lambert du Lattay and à François(e). Vines average over 35 years of age. The vineyards are in conversion from organic to biodynamic.
Soil Clay over schist bedrock.
Viticulture Vineyards are farmed using organic and biodynamic principles. All vineyard work is done by hand. Harvesting of the grapes occurs as quickly as possible with a large team to ensure the proper acidity levels are maintained.
Vinification Grapes are de-stemmed and pressed very gently immediately after harvesting. All juice is contained at 3 degrees celsius until harvest is completed. The St. Lambert du Lattay and à François(e) parcels are vinified separately in a combination of 50% underground Inox tanks, and 50% French barrels and Austrian Stockinger barrels (for approximately 3 months). Each parcel is then aged separately. After fermentation completes, the juice from 1 of the 2 underground Inox tanks is transferred to barrels. 75% of the juice is aged in barrels and 25% aged in underground Inox tank.
Aging Aged in a combination of French barrels and Austrian Stockinger barrels for 12 months. No more than 20 percent new french oak is used. Most barrels are 1 to 2 years old. Aged an additional 6 months in Inox tank before bottling.
Notes Thibaud harvests his parcels using 30 harvesters in only 4 days! Harvesting is very fast as Thibaud harvests later than other growers to ensure optimal ripeness of the fruit before picking.
