Viticulture Traditional vinification with temperature control and long maceration. A small amount of used French oak is utilized.
Vinification Thermo-regulated - alcoholic fermentation controlled at 27- 30°C. Remontages -pumping over and delestage-. 3 to 4 weeks of fermentation.
Notes It has a higher than usual proportion of Cabernet Sauvignon and is aged at the domaine for 3-4 years before release. These qualities are often found in the flagship wines from more famous appellations, but Antonins invests the same time and care in their humble red, which makes it an amazing value and a consistent favorite.
