Domaine François Crochet is made up of 11.5 hectares of vines, 8 of which are planted to Sauvignon Blanc and 3.5 hectares to Pinot Noir. The vines are planted in 30 parcels located primarily in Bué from which they are currently producing 11 different cuvées : one rosé, three reds, and seven whites, mostly from parcel selections. The soil of each parcel varies between chalky soil locally known as “caillottes”, clay chalky soil and silex (flint).

As of 2017, the domaine is certified organic but have taken another step forward working biodynamically with official conversion in 2020.  Grapes are 100% hand harvested and rigorously sorted out. The harvest date for each parcel is set after daily analysis of the juice and tasting of both grapes and juice in order to get perfect maturity. Yields vary depending on the parcels but average 40 hl per ha.

During harvest, grapes are carried to the cellar in a bin fitted with a vibrating system and transported into the pneumatic press by conveyor belt. Whole grape pressing combined with a sequential program allow a very gentle extraction of the juice. After a static settling period the juice is racked and the alcoholic fermentation with natural yeast takes place. Once completed, the wines are matured on their fine lees in stainless steel, oak or a combination of each.
